Paraíso farm is located on one of the oldest coffee producing areas in the region, at the top of Serra da Mata da Corda. Paraíso received this name because of a stream in the region that cuts through a huge aquifer park. The farm is 100% irrigated by a drip system that captures water from dams and reservoirs. This lot is a natural anaerobic process.

About the post harvest process
Ripe coffee fruit fermented in big bags for 48 hours dried on patios, rested in bags again and finished drying on patios again. This process is at large the reason for the winey flavors and fruity aroma you find in this coffee.
