This lot comes from Finca Inés, a farm owned and run by Coope Victoria. Coope Victoria is the oldest cooperative in Costa Rica and envisions Finca Inés to become both a coffee lab and model farm, dedicated to producing the most complex coffees in the West Valley region.
This lot is a washed Geisha. The coffee was harvested when ripe, using brix to measure sugar content. At the mill, floaters are separated in water before coffee is taken to the drying patios for 24 hours to rest in shade. After the initial 24 hours, the coffee is move to african beds to complete the drying process, again in shade and with slight movements during the day. This takes approximately 19 days.
